RECIPE: No Bake Birthday Cake Protein Bars
Don't be fooled by the title ... it doesn't need to be your birthday to celebrate and eat these no-bake protein bars. Great for fuel on-the-go, packed with protein, fibre and healthy fats to leave you satisfied, and pretty much a great way to celebrate life.
PROTEIN + HEALTHY FATS + FIBRE = SATISFYING SNACK
Enough with the talking, here's the recipe!
NO BAKE BIRTHDAY CAKE PROTEIN BARS
Ingredients
1 1/2 Cups of Almond Flour
1/2 Cup of Coconut Flour
2 Scoops of Vanilla Protein
1/2 Cup of Chia Seeds
1 Tbsp of Maca Powder
1 Tsp of Cinnamon
1 Cup of Cashew or Almond Butter (Peanut Butter works too!)
1/2 Cup of Coconut Oil
1/3 Cup of Maple Syrup
1/4 Tsp of Vanilla Extract
1/2 Tsp of Almond Extract
NOT OPTIONAL: Sprinkles
Directions
In a large bowl, mix and combine all dry ingredients
In a pot over low-medium heat, combine coconut oil, maple syrup and cashew butter
Stir until completely melted and combine
Remove from heat and add almond and vanilla extract
In the large bowl, add the wet mixture to the dry ingredients and mix completely
Add sprinkles (most important step)
In a shallow baking dish, apply a thin layer of coconut oil to ensure they don't stick
Add protein bar mixture to dish and pat into place
Add more sprinkles (another important step)
Place in freezer to harden for at least 20 minutes
Notes
Bars should stay in the freezer to keep their shape (or fridge is fine if you're eating them that day)
Cut into bars (or squares) and wrap each individually in tin foil (if you have zero portion control like me)
Pack as a mid-morning or mid-day snack when you're on the go!
As much as it's super convenient to buy protein bars, every once in a while it's always a good option to try making your own, that way you know exactly what's going in it!
